
If we had not lost our internet access, and I had been able to keep up with my blog, I was planning to launch a contest. Here’s our kitchen. It’s in the hallway leading from the bathroom to our room. It consists of a bar-sized fridge, a sink, two cupboards, two burners and a microwave. The contest? For you to submit your favourite vegetarian dinner recipe (using a few simple ingredients) that could be cooked on two burners and/or in the microwave. But now that we have just two weeks left in France, I will probably not have the opportunity to try very many entries. Still, if you want to send any ideas for recipes, I would be happy to receive a collection of them whether or not I get to use them here in France. We are still using our regular email addresses (in case you were wondering).

Provencal Eggplant Soup
1 eggplant, peeled and diced
1 small zucchini, halved and sliced
1 onion, sliced
1 sweet red pepper, diced
1 tbsp olive oil
1 clove garlic, minced(more, more!)
4 cups vegetable stock
2 tomatoes, diced
1 cup stale french bread cubes(aha)
1/2 tsp oregano
1/2 tsp pepper
2 tbsp parsley (maybe)
2 tbsp Parmesan (definitely)
Microwave diced eggplant in container with plastic wrap with tiny holes poked in it, for 5 minutes or until softened.
In soup pot, saute zucchini, onion and pepper in oil until softened and browned, stir in eggplant and garlic, saute for 5 minutes. Add the rest except for the cheese, simmer for 15 minutes until all veggies are tender.
Bowl, parmesan, garlic breath.
Yummy.
Kraft Dinner: (AKA Mac & Cheese)
Instructions:
Open a box of Kraft Mac & Cheese. Boil some water. Add noodles to boiling water. Cook on medium heat until noodles are soft - to taste. Drain water into your smallish sink. Add milk, butter (or margarine if butter is not available) and cheese pouder, and stir. Spoon the entire amount into one bowl. Enjoy!
For all the meat lovers out there, simply add some chopped cubes of ham or a can of drained tuna. Yum yum!
